Are you “strictly hamburger”? That’s what my father said of me when I was 8 years old and was complaining that the steak he had lovingly prepared for me was too rare (it was medium)! He said “your strictly hamburger son”.

I like to believe that I have come a long way from that day and now passionate about all types of cuisines, the different foods and spices- especially our Talamanca Peppercorns from Ecuador- now Certified Organic.

We have put together some recipes that showcase the exceptional aroma, spiciness and unique flavor profile of our pepper. These recipes were collected from newsgroups, fellow foodies, newspapers, and cookbooks- which brings us to Steven Raichlen.

Steve Raichlen is a cookbook author (over 20 published books!)- with the latest being the Barbecue Bible series. He is a classic trained Cordon Bleu trained chef, a cooking instructor (BBQ University & Cooking in Paradise) and tireless promoter of all things flavorful- for more information, visit his website at www.barbecuebible.com. In 1992, we met Steve at a book signing in Coconut Grove, FL for his new cookbook- High Flavor\Low Fat. It was here that we got a chance to meet Steve and let him sample our newly arrived Talamanca peppercorns. He has been a fan and tireless promoter of the Talamanca Peppercorns ever since. We enjoy the privilege of being listed as a mail-order source in the index of his popular cookbooks. Follow Steve’s recipes as written, and you will be rewarded with incredible flavors.
